Cauliflower 'Tater' Salad

Makes 8 Servings


2 pkgs frozen cauliflower, lightly steamed, drained

2 celery stalks, chopped

1/4 cup chopped red onion

4 hard cooked eggs, chopped (more if desired)

1/4 cup diced sugar free sweet or dill pickles

2 t Dijon mustard, more if desired

1 c homemade olive oil mayo or to desired consistency

Salt and Pepper to taste

Green onions, optional


Combine all ingredients in a large bowl.

Refrigerate several hours.

Serve and top with green onions if desired.
