24 ounces frozen cauliflower, steamed and cut into bite size pieces
1/4 cup chopped onion
6 ounces nitrate free bacon, chopped
6 ounces cheddar cheese, shredded, divided
1/2 cup chopped green bell pepper
1/2 cup olive oil mayo
2 tablespoons ranch seasoning packet (Thrive is good)
2 tablespoons lemon juice
Salt and pepper to taste
Preheat oven to 375.
In large skillet, cook the bacon and onion together.
Meanwhile place cauliflower, 4 oz cheese, and green pepper in large bowl. Mix.
In small bowl, combine mayo, ranch seasoning, and lemon juice. Pour over cauliflower mixture. Add in half of the bacon and onion. Stir and pour into greased 9x13 casserole.
Top with remaining cheese, bacon, and onion.
Heat 15-20 minutes until hot and bubbly.
