Parsley "Wheat" (Cauliflower) Salad


Serves 4


Ingredients:


12oz riced cauliflower, defrosted and drained

2oz fresh parsley, finely chopped

1 tablespoon grated orange zest

2 tablespoons lemon juice (or to taste)

1/4 cup olive oil

Salt and pepper to taste

1oz walnuts, toasted (or nut of choice), coarsely chopped


Directions:


In medium bowl, combine cauliflower, parsley and orange zest. In separate bowl or cup, combine lemon juice, olive oil, salt and pepper. Mix into cauliflower and parsley. Taste and adjust seasonings.


Before serving, top with nuts.
