Thai Style Cucumber Salad


Ingredients:


3/4 cup rice wine vinegar

1/4 cup water

1 tablespoon monk fruit sweetener

1 teaspoon minced garlic

1 tablespoon coconut aminos

1 teaspoon sesame oil

1/2 teaspoon freshly ground pepper

2 large english cucumbers, thinly sliced

2 tablespoons sesame seeds, toasted


Directions:


Combine all ingredients in a bowl. Sometimes I don't add the water or cut it down to 2 tablespoons.


Add the cucumbers. Refrigerate to marinate, preferably overnight.


Add toasted sesame seeds just before serving


Approximately 8 servings and about 2 carbs each. Everything else is negligible unless you drink the juice!
